Ingredients
- •1½ cup American Sweet corn, boiled
- •¾ cup Tomato, chopped
- •¾ cup Green Capsicum, cubed
- •½ cup Spring Onion (include green stem), chopped
- •1 tbsp Pumpkin seeds
- •2 tbsp Black Raisins, washed & soaked for a while
- •2 tsp Grated ginger
- •1 stalk Celery, chopped fine
- •½ tsp Pounded pepper
- •2 tbsp Thai sweet chilli sauce
- •½ tbsp Lemon juice /vinegar
- •Salt-to-taste
- •2 tbsp Feta Cheese/Processed cheese, grated
Method
- 1In a large mixing bowl, add all the vegetables and chill till serving time
- 2Just before serving, mix in the spices, salt and dressing and toss well
- 3Serve garnish with cheese

Sweet corn contains a lot of fiber and protein while being low in fat and sodium.
