Make 2 to 3 very small slits on the brinjal and insert a clove of garlic in each, apply a few drops on the brinjal and roast on an open flame turning over eash side to ensure that the entire brinjal is roasted well and cooked
Allow to cool, peel off the charred outer coat, place the peeled brinjal in a plate and mash it with a fork
Heat the olive oil in a non-stick deep pan on a low flame, add the chopped onion and garlic
Saute till onions are translucent, add the mashed brinjal, chopped green chili, coriander leaves and salt, mix well
Taste, adjust the seasoning and keep aside
Heat oil in a non-stick deep pan, add the whole spices followed by chopped garlic and onions and sauté for 2-3 minutes
Add the mince- meat and sauté for another few minutes
Mix in the tomato puree, chili powder and a little salt, cover and cook for 5-7 minutes on a low flame
Open the lid and stir in the tomato ketchup along with chopped coriander leaves and white pepper powder and chopped almonds
Cook till done and almost dry, taste, adjust seasoning
Remove the whole spices from the mince and keep aside
Heat oil in a non-stick sauce pan, add the butter and the flour (oat/wheat) saute on low flame for a minute, take off the fire and gradually add the milk mixing with a whisk all the time to prevent lump formation
Cook on a low flame stirring all the time, add salt and pepper
Add 2 tablespoons of grated cheese, nutmeg powder and continue stirring till desired custard like consistency is reached, put off the flame and pour the white sauce on the assembled brinjal and mince layers
Grease a flat, deep glass dish with very little butter or olive oil, spread all the mashed seasoned brinjal evenly
Spoon out all the cooked spicy mince over the brinjal layer, ensure that all whole spices are removed
Sprinkle 1 tablespoon of grated cheese over the mince, pour all the white sauce evenly over the mince, sprinkle the remaining grated cheese on top
Bake at 170 degree centigrade for8-10 minutes or till the top is golden, alternately you can place it in a microwave and micro for 5 minutes
Serve hot with toasted whole wheat or multi-grain bread accompanied by a soup pf your choice
