Ingredients
- •Boiled Kabuli Chana- 1 cup
- •Mini soya chunks- ½ cup
- •Baby potatoes-4-5, boiled
- •Tomatoes-2, cubed after de-seeding
- •Capsicum- 2 tablespoons, cubed
- •Coriander leaves- 1 tablespoon, chopped
- •Flax seeds- 1 teaspoon, slightly roasted
- •Dressing:
- •Olive oil- ¾ tablespoon
- •Grated ginger-1 teaspoon
- •Finely chopped garlic- ½ teaspoon
- •Finely chopped onion- 2 teaspoon
- •Thai sweet chili sauce- 1 tablespoon
- •Salt- ¼ teaspoon
- •Honey- 2 teaspoon
- •Pounded pepper- ½ teaspoon
- •Lemon juice- 2 -3 teaspoons
Method
- 1Soak the mini soy chunks in hot water to which a little salt is added for about 7-8 minutes, drain and squeeze out all excess water
- 2In a mixing bowl place all the vegetables and the squeezes soya chunks, chill for a while
- 3Mix all the “Dressing” Ingredients : : into a tight lid bottle, shake well
- 4Pour the dressing over the mixture of Kabuli chana, soya chunks and vegetables. Taste and adjust seasonings
- 5Serve chilled with a sprinkling of flax seeds and lavash/crushed khakhra/toasted croutons/bread sticks
