Ingredients
- •2 cups Carrot, thickly grated
- •1 cup Low- Fat Milk
- •3 tbsp Skim milk powder
- •10 nos. Dried figs, chopped
- •1 tbsp Almonds (slivers)
- •¼ tsp Cardamom powder
Method
- 1Soak the chopped figs in 1/4th cup warm milk
- 2Place the carrots and milk in a pressure cooker and pressure cook for 1 whistle.
- 3Stir in the soaked dried figs and skim milk powder, then continue cooking until the mixture is smooth.
- 4Stir in the cardamom powder and almond slivers and simmer for 4 minutes over medium heat, stirring constantly.
- 5Serve the Khubani Aur Gajar ka Meetha *Those who prefer it sweeter do add a drizzle of honey (For festive occasions this dessert can be served with a dollop of Kulfi or Rabdi)
Chef's Notes
Dried figs are a good replacement for unhealthy white sugar in the recipe as it imparts sweetness coupled with nutrients
The milk adds much-needed protein and carrots give the fiber and vitamin A
