Ingredients
- •Millet or whole wheat pasta- 2 cups,200g
- •Spinach- 2 cup, clean, wash, blanched
- •Basil-Few sprigs
- •Avocado- 4 tbsp pulp (50-60 gms)
- •Oats powder- 1 tablespoon
- •Milk: 1 cup
- •Skim milk powder- 1 tbsp (15gms)
- •Garlic- 2-4 flakes, optional
- •Cheese- 2 -3 tbsp grated (30gms)
- •Green chillies- ½ -1 optional
- •White pepper powder- ½ tsp
- •Sugar-2tsp
- •Olive oil- 1 -2 teaspoons
- •Cherry tomatoes- few for garnish
Method
- 1Boil the millet pasta in salted water till just done, drain, add olive oil, toss, keep aside
- 2Wash, and blanch spinach
- 3In a blender add all ingredients except cheese and pasta and grind to a smooth paste
- 4Transfer to a pan and make it warm on a low flame stirring constantly, simmer, do not boil
- 5Add half of the cheese and taste, adjust seasoning
- 6Mix in the cooked pasta, put off the flame
- 7Serve garnished with remaining cheese and cherry tomatoes
