Ingredients
- •1 big bunch Green Amaranth leaves, Chavli ((Approx 3 cups, cleaned chopped))
- •1 medium Sweet potato,Shakarkandi ( peel, medium cubes)
- •1 medium Onion, chopped
- •8-10 Garlic flakes
- •2-3 Green chilies
- •2 Dry red chilies (broken)
- •1 tsp Sesame seeds
- •½ tsp Haldi powder- ½ teaspoon
- •2 tbsp Coconut (scraped (optional))
- •1 tbsp Oil
- •Salt- to taste
Method
- 1Clean, wash thoroughly and chop the Chavli greens finely
- 2Grind coarsely the green chilies and garlic
- 3Heat oil in a deep non-stick pan or kadhai, add the sesame seeds, chopped onions, green chili-garlic coarse paste, and the dry red chilies, saute for a minute or two
- 4Add the cubed Sweet potato,salt and saute for a while
- 5Add haldi powder, and the chopped chavli greens
- 6Mix well and saute again for some time
- 7Add about2-3 tablespoons of water, cover and cook on a low flame till done

Coconut is high in fibre and MCTs.
