Ingredients
- •¾ cup French beans
- •¾ cup Broccoli
- •1 cup Lettuce leaves, shredded
- •3 nos. Baby corn, cut into long diagonals
- •½ cup Paneer
- •1 tbsp Almonds, toasted and chopped
- •1 tbsp Black Raisins
- •1 cup Tomato juice
- •1 tsp Tabasco sauce or red chili sauce
- •1 tbsp Honey
- •½ tsp Pounded pepper
- •1 tsp Grated ginger
- •2 tsp Whole wheat flour
- •Salt- to -taste
Method
- 1Cut the tips off the French beans, and cut broccoli into florets
- 2Blanch French beans, broccoli and baby corn in slightly salted water, drain and cool
- 3Wash and shred the lettuce, chill
- 4In a sauce-pan blend the whole-wheat flour, tomato juice, Tabasco sauce, grated ginger, pounded pepper, honey and salt
- 5Cook on a low flame for 7-8 minutes till reduced to half, taste, adjust seasonings and cool
- 6Arrange all the vegetables in a slightly deep serving platter, sprinkle the crumbled paneer black raisins and toasted almonds on top
- 7Pour the tomato dressing evenly on the vegetables and paneer
